Sorry, I don't have solution for you. I'm not horribly familiar with the XBOX 360 setup, so it's hard for me to say whether or not you can do this successfully. With the PS3, you can route the video through HDMI and audio through component... i don't think the 360 lets you do that.
There is an article about connecting your 360 to various outputs... maybe that will help you solve the problem.
